VERACRUZ NATURAL

Variety: Límani, Sarchimor.
Process: Natural.
Altitude: 1350 m.a.s.l.
Score: 88.25 points.

This coffee is about the thrill of trying something new and finding it is so good, that you later want to come back for more. The Limaní and Sarchimor varieties, or México for that matter, don't come across the specialty coffee world that often. The result, however, is exceptional. This coffee tastes a bit like grape juice or tamarind, a fruit typical of the Veracruz state. Albeit exotic and citric, this coffee is comforting with sweetness to honey and cacao which makes it perfect for an everyday companion. Until it runs out and you want more that is...

AZAHAR COLOMBIA

Variety: Caturra.
Process: Culturing.
Altitude: 1750 m.a.s.l.
Score: 88.25 points.

We are particularly excited to bring you this coffee because it perfectly embodies our mission to Innovate from the Origin. From its extraordinary profile, fermentation process, its roasting, to the story, this coffee is a hint of what is possible when the experience comes entirely from the Origin.

Notes of orange blossom accompany spicier notes of cinnamon. The acidity of this coffee is perfectly balanced by sweetness akin to the sensation of biting into the ripest slice of tangerine. Azahar means orange blossom in spanish–after the first sip you will immediately identify the reason behind this coffee's name.

Azahar was prepared with an innovative culturing process in which fermentation is started with microorganism cultures from local fruits and aromatic plants. The coffee is then roasted at the farm with a Colombian-made Prisma Roaster. When brewed on the VacOne, you will be enjoying one of the most novel, and most authentic experiences in coffee.

Variety: Bourbon, Caturra, and Catuaí.
Process: Natural.
Altitude: 1600 m.a.s.l
Score: 86.5 points.

This coffee, or collection of coffees we should say, is quite peculiar because it is a single origin but doesn't come from a single farm. Instead, we select the best, ripest coffee cherries from micro producers from the Jalapa region and bring them in together for dry processing: a lengthy and risky process in which the cherries are carefully turned every 3-4 hours for a total of 28 days.

The resulting coffee has a fine acidity with an accompanying sweetness akin to strawberries–all within a well structured body characteristic of dry processed beans.

The pulp of the cherry is left on while the coffee seed is dried, which imparts complexity to a high altitude coffee grown in mineral-rich volcanic terroir. This coffee has depth and body like nothing we have ever tasted before.
